Eight Row Flint’s Tuesday Outdoor Cooking Series continues this month with guest Chef Troy Witherspoon of Buffalo Bayou Brewing Co. who will serve up his take on brisket chile rellenos.
Troy, who is currently sales manager at the brewery, was previously a chef at Brews Brothers in Galveston and operated the food truck Craft Infusion around Houston which incorporated local craft beer into its dishes.
For the cooking series at Eight Row, Troy says he’s putting his spin on chile rellenos based on a dish he tried at a barbecue joint in North Texas. The brisket chile rellenos will be stuffed with goat cheese, epazote and lime and come served with a side of broccolini, onions, grapefruit and fresh horseradish.
“I’m excited because this is live and interactive and very different from how I’ve cooked before,” Troy says. “I love that I’m going to get to interact with people as we do this—I think it’s going to be a great experience.”
Eight Row will also be pouring Buffalo Bayou’s Crush City IPA during the series. The brewery is donating every dollar of this current batch of Crush City, no matter where it’s poured, to victims of Hurricane Harvey. Troy says he hopes patrons come out, have fun and support the relief effort.
