Daily Bread at Indianola
We love bread. We know, obvious statement, but still, we LOVE bread! So does Chef Ryan, which is why it’s such a big part of our operations at Indianola in EaDo.

He’s really busy running all seven of our concepts so he’s not able to take on the role of baker, which is why he hired John Weatherly to manage all of our baking needs. From Vinny’s pizza dough to sourdough to chocolate cinnamon babka, John is on it!
Here are the steps he follows to make our favorite sourdough at Indianola, which you can sample in a few different ways on the menu: daily sourdough served with salted butter, mushroom toast and the bread in the panzanella salad.
We only use 4 ingredients. Yes, simpler is often better.
